Lamb

Lamb rack: French trimmed lamb cutlets are a beautiful delicious cut which are best cooked on the griddle pan or for barbecue.
Lamb shank: lamb shanks are a rich cut with gelatinous sinew which breaks down during slow cooking creating a fabulous flavor.
Leg of lamb: a leg of lamb makes a wonderful roast.

We source Dutch milk-fed veal. Veal is easily digestible, low in cholesterol and rich in vitamins and minerals. It is a piece of meat which works in any menu. It has a subtle flavor and is highly regarded – and widely used – by chefs around the world.

Veal cuts: tenderloin – rack – topside – eye of round.

Baby Chicken (English or French): young corn-fed chicken; the meat is tender and sweet in flavor – average weight 500G.

They live a longer and happier life scratching around in the fields and this is reflected in the amazing eating quality of the bird. Fed on a diet including wheat, maize and whole natural oats, the end product is simply incredible in taste and texture, quite unlike any other.
Organic Welsh Chicken (1.3-1.5 kg each): free to roam the Herefordshire landscape, these slow reared organic chickens have a succulent and mild, meaty flavor.
Yellow chicken: from England with an average weight of 1.2 – 1.3 kg each.
